Buckwheat Chia Pancakes

Ingredients

1/4 cup chia seeds 

3/4 cup buckwheat groats 

1/2 teaspoon of baking powder

1 egg

approx 3/4 cup of coconut milk - or any milk of your choice  (more or less depending on how you like your pancakes) 

Directions

1. Quickly blend chia seeds and buckwheat groats in a blender or food processor to resemble flour.  I like it a little bit course so don't be too worried if its not super fine.

2. Break egg into a bowl and whisk.  

3. Add blended buckwheat and chia seeds, baking powder and milk to the egg.  - Note this mixture will thicken as it sits.  I add more milk just before I cook them.  The mix keeps really well in the fridge for a couple of days and I just add more milk if it has thickened up.

4. Heat oil / butter in a pan and make either individual large pancakes or if you want you can keep the mixture a little thicker and make small picklets.

5.  Enjoy with your favourite toppings.  We love butter, thick coconut cream, berry coulis, banana and kiwifruit.  Also perfect with butter and maple syrup 👌
