Raw broccoli salad

Ingredients

Dressing

1 1/2 Tablespoons Oil - ( I use Avocado oil )

1 1/2 Tablespoons of Mayonnaise or Coconut cream ( I do a mix of both ) 

1 Tablespoon Apple Cider Vinegar

1 teaspoon dijon mustard

1/2 teaspoon of maple syrup or honey 

1 clove of garlic - minced

a pinch of salt 


For the salad

1 whole broccoli 

2 spring onions or a small amount of finely diced red onion 

A handful of broccoli sprouts or any preferred sprout

1/2 cup Tamari roasted pumpkin seeds - Instructions for these below

Directions

In a bowl mix together all dressing ingredients.  

Finely dice the broccoli.  I use the nice part of the broccoli stem also.  Just dice it nice and small 

Mix the broccoli, sprouts and pumpkin seeds into the dressing and serve.  

This is one of those salads that gets better after sitting for a few hours so perfect to make ahead of time and it is still amazing the next day. 

For the Tamari roasted pumpkin seeds

Heat a dry frying pan over a medium heat.  Gently toast about 1/2 a cup of raw pumpkin seeds tossing occasionally until they look toasty.  Add in about 2 teaspoons of tamari and stir them over the heat for another 30 seconds until all coated in the Tamari.  Take off the heat before the tamari gets burnt.  Great as a topping on all salads or just as a snack
